Slightly sweet with intense chocolate and plum fruit nose.  Hint of vanilla and chocolate on the mid-palete. A very pronounced silky finish. Enjoy with Dark Cherry Bread Pudding with Crème Anglaise, Berry Cobbler, Figs stuffed with Blue Cheese and Molten Chocolate Mocha Souflé.

Wine Profile

Tasting Notes Chocolate and caramel flavors on the nose with lots of vanilla and coffee on the mid-palate makes this a nice port-alternative dessert wine.
Winemaker Notes The fruit came from a Paso Robles West side vineyard. This Merlot fruit was in it’s tenth season, or tenth leaf. The growing season was long and cool which led the fruit to have thicker skins. This gave us more color and richness. Long barrel -ageing in one year old French Oak added tannins to soften the wine. It is unfiltered to keep full mouth feel and flavor. It was fortified with aged brandy and balanced with 4% residual sugar.
Food Pairing Notes Enjoy with Bread Pudding, Custards, Cakes and Chocolate Soufflé deserts, or sip by the fireplace on a cold day.
