Marinated Eggplant - Appetizer



Pairs with Red Rhone like Eclipse Mourvedre, Mystic Merlot  and Stargazer Cab Sauvignon (enough for 20 small appetizer servings)

 

  • 2 eggplants, washed and thinly cut (1/4 in)
  • Brush each slice on both sides with olive oil + salt + black pepper
  • Grill on skillet or griddle until light golden, each side
  • Cool completely
  • Place in large container to marinate at least 2 hours, best overnight
  • Add 1/3 Cup good Balsamic Vinegar
  • Add 2 Tablespoons of Extra Virgin Olive Oil
  • 1 teaspoon of Red pepper flakes
  • Salt and Black Pepper to taste
  • Serve over mini toasts or Crostini.
