 Twilight Cellars

Twilight Cellars offers boutique wines available only direct from us...not mass-produced "industrialized" wines!  Our standard Red Wines are aged extensively in oak for a minimum of 22 months and unfiltered.  Our Reserve Wines are aged in oak for a minimum of 3 years, cared and pampered to deliver the optimum taste to complement that very special occasion.  We produce 2000 cases annually.  Our Club Members are first in line to receive our special limited production wines and we continue to maintain our pledge of exquisite quality, excellent value and never mass produced wines.

Our wines are crafted to be enjoyed with specific foods in mind.  The affinity between wine and food is magnified to bring the best out of every meal.  The wines are a true expression of their terroir:

            Waterfall - Spicy Chicken Pad Thai, Fish with Dill Sauce, Sushi and Crisp Salads
            Sea Breeze  - Shellfish and Asian Cuisine
            Midnight Pinot Noir - Coq au Vin, Smoked Salmon or Grilled Meats
            Eclipse Mourvedre - Beef Tri-tip, Mediterranean & Morocan Cuisine
            Thunder – Smoked & Grilled Meats,  Mediterranean and Spanish Cuisine
            Gravity Syrah - Italian, Cajun, Mexican Cuisine
            Storm Zinfandel - BBQ meats, Mexican and Italian Cuisine
            Dawn Merlot - Rack of Lamb, Cheddar Cheese and Casseroles
            Stargazer Cabernet Sauvignon - Steak, Chateau Briand, and Beef Wellington
            Vortex Petite Verdot - Hearty Casseroles, Pork Roast and Game 
            Rapture Dessert Merlot - Dark Chocolate desserts and Bread pudding.
            Mundo Viejo Port - Dark Chocolate and Blue Cheese with Apricot

Twilight Cellar's Tasting & Hospitality Center is currently CLOSED. We have moved  to San Juan Bautista, half mile from the 101 FWY/156 FWY interchange, we expect to re-open our doors sometime in June 2013 and will continue to make wine at Paso Robles  Wine Services  Co-Op.  Please refer to the "News" section Newsletter subsection of this website for further details.
